First he graduates, then we celebrate with a #CoronaRita

We are about to celebrate a very big event for our family! My husband graduates with his Ph.D. in a week and a half. After four years of hard work, during which he had to balance school with getting married and having a child, this calls for a celebration. We are flying back to Indiana to attend his graduation, so we won’t be able to plan a party for him (we did have a small party a few weeks ago with his labmates here), so we will probably be celebrating by going out for a dinner with family.

My husband and his family are all huge Chili’s fans, so I don’t even need to ask where they’ll want to go to celebrate. I certainly don’t mind one bit, because I can never get enough of their crunchy fish tacos. Fish tacos are one of my all-time favorite foods, but I rarely order them when I go out because many places make them with soggy, tasteless fish and/or so much sauce it overwhelms the dish. Chili’s fish tacos are always crunchy with the perfect amount of sauce that compliments the meal, but doesn’t smother it. I love Mexican inspired dishes…and the drinks that go with them. And nothing goes better with fish tacos than a beer or margarita…or both!

The CoronaRita at Chili's is made with BOTH Jose Cuervo Especial Tequila and Coronita. Now that’s a drink to celebrate with! When I first heard about this drink, I was amazed because finally, it’s a drink that my husband and I can actually share! It combines our two favorite drinks: David loves Corona and my drink of choice is always a margarita (on the rocks! with salt!). Although I have a suspicion that we are going to each have to get our own. With a once-in-a-lifetime achievement to celebrate, the good company of family, the fun atmosphere of Chili’s, and a CoronaRita in hand, I know it will be a celebration he’ll never forget.
